Chinese Chicken And Noodle Stir Fry using longevity noodles. These noodles are also known as yee mein, long life noodles or E-Fu noodles. Easy and delicious to make these noodles. Chewy and tasty noodles made of wheat and eggs. Recipe is below:

Chicken And Noodle Stir Fry

I package yee mein longevity noodles (8 oz.)
3 to 5 oz. sliced chicken
3 tablespoons sliced onion
3 tablespoons slivered celery
3 tablespoons slivered zucchini
2 sliced Chinese mushrooms
1/2 teaspoon salt
1/2 teaspoon sesame oil
1/2 teaspoon light soy sauce
1 tablespoon oyster flavor sauce
1/2 teaspoon dark soy sauce
2 tablespoons cooking oil
1/2 cup water or chicken stock

Boil longevity noodles for 1 minutes. Use chopsticks or a fork to separate noodles during boiling. Run noodles under cold water. Strain and set aside noodles.

Preheat cooking pan at medium heat. Add cooking oil. Add onions, celery, zucchini and Chinese mushrooms. Stirfry briefly and then add chicken to one side of pan. Turn heat on high and stirfry the ingredients for about 1 minute. Add noodles, salt and light soy sauce. Continue to stir fry. Just before final stirfry, add dark soy sauce and green onions. Serve on a nice plate. Enjoy!
