This is an authentic recipe using Pomelo. Also known as Chinese Grapefruit Skin. The Chinese Grapefruit Skins are marinated in a Dark Soy Sauce Marinade. The flavours are infused into the pork belly in a sizzling wok stir fry. The Chinese Grapefruit Skins have a citrus flavor combined with the aromatic ginger and garlic. Your friends and family will be impressed when you make this recipe. There are few if any restaurants that serves any dishes using Chinese Grapefruit Skin. Recipe is below:
Pork Belly And Chinese Grapefruit Skin Stir Fry
Skin of 1/2 Chinese Grapefruit (Pomelo)
5 to 6 oz. slice pork belly
3 tablespoons cooking oil + 1 teaspoon cooking oil
3 tablespoons chopped ginger
3 tablespoons chopped garlic
1 teaspoon sesame oil
1/2 teaspoon salt
3/4 cup chopped chives
Marinade:
2 tablespoons ginger
6 star anise
1 tablespoon cumin seeds
5 cloves garlic
1/2 dried Chinese orange peel (2 tablespoons)
2 tablespoon sugar
3 cups water
1/2 cup dark soy sauce
Put water in a wok or pan. Add soy sauce. Bring to a boil and add ginger, garlic, star anise, cumin seeds, garlic cloves and dried Chinese orange peel. Boil for 10 to15 minutes and then let cool off. Put marinade in a large bowl. Put Chinese grapefruit skins in the marinade and put in fridge for at least 12 hours.
To Stir Fry:
Preheat a wok or pan at medium heat. Add ginger and garlic. Stir fry for 20 seconds. Add pork belly and sear briefly. Stir fry briefly. Add sesame oil and salt. Add Chinese grapefruit skins. Turn heat on high and add a small amount of the marinade. Add chives and briefly stir fry. Add 1 teaspoon cooking oil to add shine. Finish with final stir fry. Serve with hot rice if you like. Enjoy!
