Stir Fry Chicken And Vegetables Noodles
10 oz. "Farkay" Brand Rice Noodles
6 oz. sliced chicken
(marinaded in 3 tablespoons cooking oil, 2 tablespoons light soy sauce, 1 teaspoon sesame oil and 1 tablespoon cornstarch)
2 cups sliced celery
1 cup sliced onions
1 1/2 cups cilantro
2 tablespoons sliced ginger
2 tablespoon whole garlic, smashed
3 tablespoons cooking oil
1 teaspoon sesame ouil
1/2 to 1 teaspoon salt
1 tablespoon light soy sauce
2 tablespoons dark soy sauce
1 to 2 tablespoon oyster sauce
In a pot, bring some water to a boil. Add 1 teaspoon salt. Add noodles and boil according to instructions. The "Farkay" brand of noodles cook in 5 minutes. Put noodles in strainer and run under cold water for a few minutes.
Marinade chicken in cooking oil, light soy sauce and sesame oil. Add cornstarch and mix well. Marinade chicken for at least 1 hour.
Cut up vegetables of your choice. We are using sliced celery, sliced onions. Rinse the cilantro in cold water.
Preheat a pan or wok at medium heat. Add cooking oil. Then add ginger and garlic. Briefly stir fry. Add sliced chicken, celery and onions. Continue to stir fry briefly. Add noodles. Add sesame oil, salt, light soy sauce, dark soy sauce and oyster sauce. Stir fry until vegetables are the right texture for you. Add cilantro and do final brief stir fry. Serve on a nice plate.
