Simple and easy recipe for Vegetables with Noodle Stir Fry. Use whatever vegetables you have handy in the fridge. I use the dry rice noodle stick for this delicious recipe. You can make this dish anytime. This is a healthy Chinese recipe. Noodles and vegetables are a great combination to serve your family, friends or guests. Recipe is below:
1/2 package dry rice noodle stick (227 grams)
3 to 4 cups of vegetables of your choice (ie. onions, celery, red
pepper, kobacha
cabbage, snow peas,
mushrooms, etc.
1 tablespoon chopped ginger and garlic
5 tbsp. cooking oil + 3 tbsp. cooking oil
1 teaspoon sesame oil
1 to 2 tablespoon light soy sauce
1 to 2 tablespoon Chinese Oyster sauce
1 teaspoon salt + 1/2 to 1 teaspoon salt
1 tablespoon cornstarch in 1/3 cup water
Bring a pot of water to a boil. Add salt and dry rice noodle stick. Stir noodles so they don't stick together. Cooking time for these noodles are 3 to 6 minutes. Noodles are nice and chewy at the 3 minute mark. Pour noodles into a strainer and briefly rinse in cold water.
Pre heat a wok or pan at high heat. Add 5 tablespoons cooking oil.
Add noodles in. Sear the noodles for 2 to 3 minutes. Remove noodles onto a large plate.
Clean wok and put heat setting at high. Add 3 tablespoons cooking oil. Add ginger and garlic and briefly stir fry. Add vegetables and briefly stir fry. Put a cup of water. When the liquid
is boiling, slowly mix in the cornstarch solution to thicken the sauce. Serve the Vegetables and Noodles on a nice plate. Enjoy!
