Beef Chow Fun (Stir Fry Rice Noodles)

8 to 10 oz. fresh rice noodles
4 oz. sliced beef
1 cup bean sprouts
2 tablespoons chopped ginger and garlic
3 tablespoons chopped green onions
2 tablespoons cooking oil
1/2 teaspoon sesame oil
1 teaspoon dark soy sauce
1/2 teaspoon light soy sauce

For more tender beef, marinate in 3 tablespoon cooking oil, 1 teaspoon corn starch and 1/2 teaspoon salt. Marinade at least 1 hour or overnight in fridge.

Preheat pan at medium heat and add 2 tablespoons cooking oil.
Add rice noodles to pan and fry for 2 to 3 minutes. Add beef to one side of pan and stir fry for 30 seconds. Add ginger and garlic to the beef and stir fry. Add bean sprouts and stir fry all ingredients for 1 minutes. Add sesame oil, dark soy sauce and light soy sauce. Turn heat to medium high to high and stir fry for 1 to 2 minutes. Add green onions just before serving. Serve noodles on a plate or in a bowl. Enjoy!
