dry rice stick noodles (227 grams or 1/2 lb.)
4 to 6 oz. sliced beef
3 tbsp. cooking oil + 1 tbsp. cooking oil + 3 tbsp. cooking oil
1 tablespoon sliced ginger
1/2 cup sliced onions
1/2 cup sliced celery
1/3 cup sliced carrots
1/2 cup snow peaas
1/2 sliced mushrooms
1 teaspoon salt (boiling water) + 1 teaspoon or less salt
1 teaspoon sesame oil
1 to 2 tablespoons light soy sauce
1 to 3 tablespoons dark soy sauce
1 tablespoon Chinese oyster sauce

Bring a pot of water to boil. Add 1 teaspoon salt. Put dry rice stick noodles in water. According to package instructions, boil for 6 minutes. For firmer noodles, boil only for 2 to 3 minutes. Be sure to stir noodles, so they don't stick together. Rinse noodles in cold water, also to prevent sticking.

Slice beef to size that you like. In this recipe, we use New York steak, which is a quality cut of beef which usually doesn't require marinating. You can also use other cuts of beef, such as top sirloin, flank steak or chuck steak. New York steak is also known as strip loin steak or club steak.

Slice carrots and mushrooms. Cut off the ends of the snow peas. You can use whatever vegetables you like.

Pre heat a wok or pan at medium heat. Add 3 tablespoons cooking oil. Add ginger, onions and celery. Stir fry briefly and push to the side. Add 1 tablespoon cooking oil and turn heat setting to high. Add beef and let sear briefly. Mix everything together and stir fry briefly. Remove beef mixture onto a plate or bowl.

Add more oil to wok. Add rice noodles and briefly sear and stir fry.
Add celery, snow peas and mushrooms. Add sesame oil, light soy sauce, dark soy sauce and oyster sauce. Do final stir fry. Serve on a nice plate. Enjoy!
