Easy and delicious recipe for Pineapple And Chicken Fried Rice. Pineapple cubes are carved from a fresh pineapple. Sear the pineapple and chicken in a sizzling hot wok or pan. Pineapple And Chicken Fried Rice In A Pineapple Bowl
1/4 a fresh pineapple or 1/2 to 1 can of pineapple cubes
4 to 5 oz. sliced chicken
1 tablespoon cooking oil
1 teaspoon chopped ginger
1 teaspoon chopped garlic
3/4 cup sliced green pepper, orange peppers, red peppers
1/4 cup sliced onions
1 teaspoon salt
1 teaspoon sesame oil
3 to 4 cups cooked steamed rice
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
Cut pineapple in half. Use a knife to carve 4 edges of pineapple half. Carve up and down the pineapple to cut into cubes. Use spoon to dig out cubes of pineapple. Using spoon, also carve out the pulp and juices at the bottom of the pineapple. Use the fruit of 1/4 of a pineapple for this recipe or 1/2 to 1 can of pineapple cubes.
Slice 3/4 cup green, orange and red peppers for colour. You can use 1 colour of pepper if you like, such as green peppers. Slice 1 small onion (approx. 1/4 cup onions)
Slice chicken into bite size pieces. I used chicken thighs for this recipe but you can use any kind of chicken meat that you like. Chicken thighs stay pretty moist, so I didn't have to marinade it.
Preheat a pan at medium heat. Add chopped ginger and garlic and flash fry for 20 seconds. Add peppers and onions. Stir fry briefly. Turn heat up to high. Put chicken in and sear for a few seconds and stir fry the chicken briefly. Add salt and sesame oil. Mix in veggies with the chicken. Add rice and continue to stir fry. Add pineapple. Add light soy sauce and dark soy sauce. Do final stir fry. Serve pineapple and chicken fried rice in the hollowed pineapple bowl. If you are using canned pineapple cubes, serve on a nice plate. Enjoy!
