Don't throw away the rind when you eat watermelon. Here is a delicious recipe for wok stir fry. The rind is stir fried with New York steak with ginger, garlic and other tasty ingredients. The rind is the white area between the skin and the red fruit. When the rind is stir fried, it's is infused with the all the flavours in the wok. It's crunchy and yummy. Beef And Watermelon Stir Fry
1/2 small watermelon or portion of large watermelon
8 oz. slice beef
1 tablespoon chopped garlic
1 tablespoon chopped ginger
4 tablespoons cooking oil
1 teaspoon sesame oil
1 teaspoon salt
1 tablespoon soy sauce
1 tablespoon oyster flavoured sauce
1/2 cup chopped green onions
Wash the skin of the watermelon under cold water. Dry the surface with a napkin. Cut the watermelon into small slices. Cut the red fruit to separate from the rind, also known as the pith. Use a knife or a potato peeler to cut the green skin on the outside of the rind. Then cut the rind into pieces. You can cut the rind into thin strips, rectangular, squares or cubes. Whatever shape you cut the rind, just make sure they are cut all the same size for more even cooking.
Cut the beef into slices. You can marinate the beef if you like. I used New York steak, also known as strip loin, for this recipe. This is a tender cut of beef, so it does not need to be marinated.
Preheat a wok or pan at medium heat. Add 3 tablespoons cooking oil. Add chopped garlic and chopped ginger. Stir fry for 20 seconds and move the garlic and ginger to the edge so it does not burn. Turn heat to high setting. Add 1 tablespoon oil and sear the beef for 30 seconds. Stir fry the beef to half way cooked and remove the beef onto a plate. Leave the heat setting on high. Put the watermelon rinds into the wok. Briefly stir fry. Add sesame oil, salt, soy sauce and oyster flavoured sauce. Continue to stir fry. For crispy watermelon rind, stir fry for about 5 minutes. For more tender watermelon rind, cook longer. You do not need to add water for this dish. The water from the watermelon rind will come out during cooking.
Add the beef back into the wok. Briefly stir fry the beef and watermelon skin. Add the green onions and mix in.. Serve on a nice plate. Be sure to make some steamed rice with this dish. Enjoy!
