Simple recipe for Bitter Melon And Chicken Stir Fry With Fermented Black Beans. Boiling the bitter melon will help get rid of the bitterness. Adding ingredients like ginger, garlic and brown sugar really brings out the flavor of bitter melon. Recipe is below:

Bitter Melon With Chicken Stir Fry

2 medium size bitter melons
4 to 6 oz. slice chicken
1 tsp. sesame oil
1 tsp. salt
1 tbsp. light soy sauce1 tbsp. oyster flavoured sauce
1 tbsp. brown sugar
1 to 2 tsp. fermented black beans
1 to 3 tbsp. cooking oil

Slice each bitter melon in half length wise. Scrape out the pith and seeds in the centre of the bitter melon. Cut off the ends. Lay the bitter melon on the flat side and slice the bitter melon in 1/4 inch width.

In a pot, bring some water to a boil. Make sure there is enough water to submerge the bitter melon. Boil the bitter melon for about 5 minutes. Put bitter melon in a strainer and rinse briefly with cold water.

Preheat a wok or pan at medium heat. Put cooking oil in. Add chopped ginger and garlic. Flash fry for 20 seconds. Turn heat on high and add chicken. Let chicken sear briefly. Add sesame oil. Add bitter melon and briefly stir fry. Add salt, soy sauce and oyster flavoured sauce. Briefly stir fry. Add sugar and briefly stir fry. Add fermented black beans and fish with final stir fry. Serve on a nice plate. Enjoy!
