Delicious Chicken Veggie Stir Fry. Special because it's served in a Sweet Potato Bird's Nest. Or if you like, a potato bird's nest nest. Either way, it's a tasty, special dish to serve your family or friends. Your family and friends will be impressed. Recipe is below:
To make 2 or 3 bird's nest:
1 medium sweet potato
1 egg
3 tablespoons cornstarch
Cooking oil for deep frying
Preheat cooking oil in a pot or deep fryer. You can us corn oil, peanut oil or whatever cooking oil that is suitable for deep frying.
Don't overfill the oil. Make sure cooking oil is hot, at 375 degrees F (190 degrees C).
Take off the skin of the sweet potato with a knife or potato peeler. Slice the sweet potato into thin slices and then into shoestring size. Add egg and cornstarch to the shoestring sweet potato. Mix to bind the sweet potato so it doesn't separate during deep frying. I use a metal strainer to hold the sweet potato during stir frying.
Deep fry the sweet potato for 3 to 4 minutes. Tap the metal strainer and then use a spatula to remove the sweet potato bird's nest onto a plate.
Chicken Veggie Stir Fry
4 to 6 oz. chicken breast
3 tablespoons cooking oil
1 to 2 tablespoons sliced ginger
2 to 3 cups cut vegetables
1 tablespoon cornstarch in 1/3 cup water
Preheat a wok or pan at medium heat. Add cooking oil. Add ginger and stir fry briefly. Turn heat setting to high. Add chicken breast to stir fry briefly. Chicken breast is cut into 1 inch cubes. Add veggies and stir fry to desired texture. Put 1/4 cup water to briefly steam veggies. Add cornstarch solution to thicken sauce. Serve the chicken veggie stir fry in the sweet potato bird's nest. Put only enough of the stir fry so the bird's nest can still be seen. There you have it, enjoy!
