What do you do with the rind after you finish eating watermelon? You make a Special Chinese dish called Chicken And Watermelon Rind Stir Fry. The white middle layer of the watermelon rind is called the "pith." Just cut out the red fruit. Then cut out the outer green skin. The watermelon rind is crunchy and tasty when you stir fry with chicken and infused with ingredients like ginger, garlic, soy sauce and sesame oil. Delicious and unique recipe. Chicken And Watermelon Stir Fry

1/2 small watermelon
5 oz. sliced chicken
1 tsp. chopped ginger
1 tsp. chopped garlic
1 cup sliced onions
1/2 cup slice mushrooms
1 teaspoon sesame oil
1 tablespoon ligh soy sauce
1 teaspoon dark soy sauce
1 teaspoon oyster flavoured sauce
1/2 cup water

To marinate the chicken

3 tbsp. cooking oil
1/2 tsp. salt
1 tsp. sesame oil
1 tablespoon light soy sauce
1 tbsp. cornstarch

Cut the watermelon into chunks. or slices. Separate the red fruit from the pith of the rind. The pith is the wite part in the middle of the watermelon. Cut off the green outer skin. Cut the rind into 1 1/2 inch squares. Half a watermelon makes about one plate of watermelon rind.

Marinate the chicken by putting the chicken into a bowl. Then put in cooking oil, salt, sesame oil and soy sauce. Mix well and put in fridge for minimum of 3 hours. You can put marinated chicken in fridge for 24 hours for more tender chicken.

Heat pan at high heat and add cooking oil. Add ginger and garlic and stir fry briefly for 20 seconds. Add salt and sesame oil. Add watermelon rinds and stir fry for 2 to 3 minutes. Add soy sauce and oyster flavoured sauce and stir fry for the last few minutes. Spread out the watermelon rinds onto a large plate.

Clean the pan. Preheat the pan at high heat. put in cooking oil and the ginger and garlic. Flash stir fry for 20 seconds. Add chicken into the pan and sear for a few seconds. Add salt and sesame oil. Add onions and mushrooms and continue to stir fry. Add soy sauce and oyster flavoured sauce. Add water and do final stir fry. Put chicken in the middle of the watermelon rinds.
Serve with hot steamed rice if you like. Enjoy!
