This is my version of Special Fried Rice With Fluffy Omlette. This is a delicious fried rice made with barbeque pork and shrimp. Then I show you how to make a fluffy delicious omlette which you put on top of the fried rice. Recipe is below:

Special Fried Rice With Fluffy Egg Omlette

1 cup barbeque pork
1/2 cup prawns, cut into small pieces
3 to 5 tablespoons cooking oil
1 tablespoon chopped ginger
1 tablespoon chopped garlic
10 cups cooled steam rice
3 tablespoons chopped onions
3 tablespoons chopped carrots
3 tablespoons chopped celery
5 eggs
1 teaspoon sesame oil
1 tablespoon light soy sauce
1 tablespoon salt
1 tablespoon dark soy sauce

Preheat a wok at medium heat. Add cooking oil. Add chopped ginger and chopped garlic and flash fry for 20 seconds. Add barbeque pork and briefly stir fry. Add prawns and briefly stir fry. Add sesame oil.Move the barbeque pork and the prawns to the edge of the wok, away from the heat. Add onions, carrots and celery and continue to stir fry. Stir fry the meat, prawns and veggies together. Turn heat to high and then add the rice into wok. Stir fry for a few minutes. Add peas into the wok. Add salt, light soy sauce and dark sauce. Finish stir frying rice and put into a large bowl.

To make omlette, preheat a wok at medium heat. Beat 5 eggs in a bowl. When the wok starts to smoke slightly, put eggs into wok. When you see the edges of the omlette bubble, it's time to flip the omlette over. Put the omlette over the rice and serve. Enjoy!
