Beef And Bok Choy Vegetables Stir Fry
4 oz. sliced beef
3 cups bok choy vegetables
1 teaspoon chopped ginger
1 teaspoon chopped garlic
1/2 teaspoon salt\
1/2 teaspoon sesame oil
1/2 teaspoon soy sauce
1/2 teaspoon sugar
1 tablespoon oil
1 1/2 tablespoons cornstarch
2/3 cup water
Optional: For more tender beef, marinate beef in 1 tablespoon cooking oil, 1/3 teaspoon salt, 1/3 teaspoon sesame oil, 1/3 teaspoon light soy sauce, 1/3 teaspoon dark soy sauce and 1 teaspoon cornstarch. Marinate 1 to 2 hours or overnight.
To Stir Fry:
Preheat a pan at medium heat. Add 1 tablespoon cooking oil. Add beef and stir fry beef. Remove beef onto a plate. when it is still slightly raw.
Add ginger and garlic to pan. Add bok choy vegetables and stir fry for 1 minute. Add salt, sesame oil, light soy sauce, dark soy sauce and sugar to the pan. Stir fry for 2 to 3 minutes. Turn up heat to high and add beef back into pan. Stir fry for 1 to 2 minutes more to sear the vegetables. Mix cornstarch solution with 1 1/2 tablespoons cornstarch with 2/3 cup water. Add cornstarch solution to pan and mix well to make sauce. Serve on a plate. Enjoy!
