Shanghai Noodles With Chicken Stir Fry
Recipe for single serving:
1 plate of fresh Shanghai noodles
4 oz. sliced chicken
1/2 chopped onion
1/2 carrot slivered
1/8 to 1/4 chopped cabbage
2 tablespoons cooking oil
1 teaspoon salt
1 tablespoon light soy sauce
1 tablespoon dark soy sauce (optional)
Boil the Shanghai noodles for 1 to 1 1/2 minutes. Rinse in cold water and strain. Chop onions, carrot and cabbage. When cool, put noodles in a bag. Put the vegetables in a bag.
Slice chicken into bite size pieces. Marinate chicken if you like. Put chicken in a small bowl. Add 3 tablespoons cooking oil, 1/2 teaspoon salt, 1/2 teaspoon cornstarch, 1 teaspoon light soy sauce. Mix well and refrigerate at least 3 hours. Put chicken in a bag to take to picnic.
To cook, preheat a wok or pan at medium heat. Add 2 tablespoons cooking oil. Add chicken and stir fry briefly. Add vegetables and stir fry briefly. Add salt and soy sauce and continue to stir fry. Cover wok or pan with tin foil if cooking on a small portable grill. Leave tin foil on for about 5 minutes. Remove tin foil and do final stir fry. Be sure to bring plate and cutlery if you are cooking at a picnic or at the beach. Be sure not to put your ortable stove on a plastic table like I did. Enjoy!
