Sweet And Sour Chicken With Pineapple (Wok Chinese Cooking)

Pineapple Chicken In A Pineapple Bowl. Made with fresh pineapple, this is a sweet and sour chicken recipe. You can make this recipe with canned pineapple if you can't get a hold of fresh pineapple. The fresh pineapple chunks, pineapple pulp and pineapple juice brings out the delicious flavours of the chicken and the other ingredients, such as ginger, garlic and oyster flavoured sauce. You won't find this recipe in any restaurant. Be ready to receive lots of applause and appreciation from your friends and family when you cook this tasty and delicious dish. Serve with hot steamed rice or fried rice. Recipe is below:

1/2 fresh pineapple or 1 can pineapple chunks
4 to 5 oz. sliced chicken
1 teaspoon chopped ginger
1 teaspoon chopped garlic
3/4 cup green peppers, orange peppers and red peppers
1 small onion, sliced (approx. 1/4 cup sliced onions)
2 tablespoons cooking oil
1 teaspoon salt
1 teaspoon sesame oil
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
1 tablespoon oyster flavoured sauce
1 tablespoon sugar
1 tablespoon vinegar
1 to 2 tablespoons tomato sauce (or use ketchup)
1 1/2 cups water
1 tablespoon cornstarch in 1/4 cup water

Cut the pineapple in half, length wise. Cut into pineapple into cubes. Use a spoon to dig out the pineapple cubes. Use the spoon to scrape the pulp and juices from the bottom of the pineapple.

Slice chicken into bite size pieces. Slice the orange, red and green peppers. Slice the onion as well. Chop the garlic and ginger.

Heat your pan or wok at medium heat. Add chopped garlic and chopped ginger into the wok and stir fry for 20 seconds. Turn heat to high setting. Put the chicken in. Sear the chicken briefly and then stir fry. Add salt and sesame oil to the chicken and stir fry briefly. Add water and bring to a boil. Add light soy sauce, dark soy sauce, tomato sauce and oyster flavoured sauce. Add green peppers and onions. Mix the cornstarch solution and water to thicken the sauce. Let simmer briefly until vegetables are cooked to your liking. Serve with hot steamed rice or fried rice. Enjoy1
