10 oz. beef flank steak (sliced against the grain)
*marinade for beef*
2 Tbsp - light soy sauce
1 tsp -- rice wine
¼ tsp -- baking soda
1 Tbsp -- corn starch
as needed -- cooking oil
2 Tbsp -- ginger (minced)
1 Tbsp -- garlic (minced)
1½ Tbsp -- fermented / salted black beans
10 oz. -- bitter gourd + 2 Tbsp salt
2 Tbsp -- rice wine (for drizzling)
** pre mix sauce **
¼ cup -- beef broth
1 Tbsp -- each, oyster sauce & light soy sauce
2 Tbsp -- rice wine ⅛ tsp white pepper
1 tsp -- each, sesame oil & white sugar
** slurry **
⅛ - cup water & ½ tsp - corn starch
