How to make Stir fry , using beef flank steak and crunchy fresh celery stalks in delicious oyster sauce.

1/2 pound ----- beef flank steak (sliced against the grain)
1 pc ------------ egg white
1 Tbsp --------- light soy sauce (for marinade the meat)
1 tsp ----------- chinkiang vinegar (for meat)
1 tsp ----------- corn starch (for meat)
as needed ----- cooking oil
1 pound ------- celery (diagonal cut 1/2 inch slices)
5 to 6 cups water (for blanching celery)
1 tsp ----------- salt (for blanching celery)
2 stalks -------- green onion (chopped 1 inch in length)
1 tsp ----------- each, ginger & garlic (minced)
premix sauce: 1/4 cup beef broth, 1 tsp light soy sauce,
1 Tbsp oyster sauce, 1 tsp sesame oil,
1 tsp sugar, 1 tsp corn starch
