Tofu Stir Fry With Seared Pork Belly

2 cups tofu
6 to 8 oz. sliced pork belly
3 tablespoons + 2 tablespoons cooking oil
1 teaspoon chopped ginger
1 teaspoon chopped garlic
1/2 cup slivered zucchini
1 cup sliced Chinese mushrooms
1/2 cup Chinese black fungus (cloud ear mushrooms)
1 cup zucchini cut into slivers
1 teaspoon salt
1 teaspoon sesame oil
1 tablespoon light soy sauce
1 tablespoon oyster flavoured sauce
1/2 cup chopped green onions
1 cup water
1 tablespoon cornstarch mix with 1/4 cup water

Take a block of tofu and cut into1 inch by 2 inch rectangle shape. Preheat a pan or wok at medium heat. Add 3 tablespoons of cooking oil. Grill the tofu pieces for 3 minutes each side. If required, flip over again and cook for 2 more minutes on each side. Put grilled tofu onto a plate.

Slice pork belly into bite size pieces. Each piece should be 1/8 to 1/4 inch thick.

Soak Chinese mushrooms anywhere from 1 hour to overnight, depending on the size and type of Chinese mushroom. Each mushroom should be soft to the touch. Soak cloud ear mushrooms until soft, usually for 1 to 3 hours. Cut zucchini into slivers. Chop up some ginger and garlic. Mix cornstarch with water so there are no lumps.

Preheat a wok or pan at medium heat. Add 2 tablespoons cooking oil. Add ginger and garlic and stir fry for 20 seconds. Add salt and sesame oil. Turn heat to high setting. Add pork belly and let sear briefly. Mix ginger and garlic into the pork and briefly stir fry. Add zucchini, Chinese mushrooms and cloud ear mushrooms. Add light soy sauce and oyster flavoured sauce. Briefly stir fry. Add grilled tofu and green onions. Add 1 cup of water. Cover with a lid and cover and simmer for 5 minutes. Remove cover when time is up.

Add cornstarch solution and mix in with the spatula to thicken the sauce. If you like your green onions less cooked, add just before serving. Serve on a nice place. Enjoy!
