Chinese Lamb Stew With Dumplings is easy and delicious cooked in a slow cooker. The meat is super tender and the vegetables are full of flavour, with the aroma of the ginger and garlic. You can cook many of your favourite recipes in a slow cooker. The easy recipe is below:
Chinese Lamb Stew With Dumplings
1 1/2 to 2 lbs. lamb shoulder or leg of lamb
3 medium carrots
2 stalks celery
1 tablespoon sliced ginger
1 tablespoon chopped garlic
1 1/2 tablespoon salt
1 tablespoon black pepper
2 tablespoons light soy sauce
8 cups water
3 potatoes
1 1/2 cups mushrooms
5 tablespoons cornstarch in 3/4 cup water
Cut lamb into 1 or 1 1/2 square inch pieces. Put lamb into boiling water for 1 to 2 minutes. Remove lamb onto a plate. Put lamb into a pot of boiling water for 1 to 2 minutes.
Preheat frying pan at medium heat. Put lamb into frying pan and grill on each side for 2 to 3 minutes. Put lamb chunks into slow cooker. Add 8 cups of water into slow cooker. Add all ingredients except mushrooms. Cover with lid and cook stew for 4 hours at high heat or 6 hours at low heat if you are using a slow cooker. Mushrooms are added in the last hour. Skim the oil from the surface before adding dumplings.
This recipe can be cooked in a regular pot. Cooking time should be about 2 to 3 hours but check to see if meat is tender.
To Make Dumplings (Makes about 9 dumplings)
1 cup all purpose flour
1/2 teaspoon salt
1 3/4 teaspoon baking powder
2 tablespoons butter
1/2 cup water
Put flour into small mixing bowl. Add salt and baking powder. Mix briefly. Add water gradually into the flour and mix with a ladle. Add butter into batter and continue to mix. Add remaining water to mix into the flour. Give the dumpling batter a final mix. Let stand for 10 minutes. In the last 1/2 hour, add dumpling batter into the slow cooker 1 tablespoon at a time. Cover with the lid. Turn dumplings after 15 minutes. and cover with the lid for the last 15 minutes of cooking. Cook longer or shorter depending on how tender you want the meat. Serve lamb stew with hot steamed rice if you like. Enjoy!
