Chinese Shrimp and Mushroom Soup is easy to make at home. The "secret" ingredient I use to flavor the soup is dried shrimp. If you can get hold of that, it is very versatile to add flavor in soups or stir-fry. Also, seafood mushrooms have very distinct umami taste and are very crispy. Enjoy!

Ingredients:
10 small shrimp, deveined
2 tsp dried shrimp, soak about 5 minutes
1 pack of seafood mushrooms
4 slices of ginger
2 green onions, sliced
2 cloves garlic, sliced
a few leaves of cilantro, chopped
Salt
White pepper powder
Avocado or vegetable oil
Sesame oil

Written recipe for Chinese Shrimp and Mushroom Soup:

1. Heat up the oil to medium high, and sauté ginger, white part of green onions and garlic for 10 seconds. Add dried shrimp and continue sautéing about 30 seconds.
2. Add 4 cups hot water and bring it to boil.
3. Cook mushrooms for about 3 minutes, and add salt.
4. Add shrimp in and cook about 2 to 3 minutes.
5. Finish with white pepper powder, sesame oil, chopped green onions and cilantro. Serve!
