Famous Chicken Clay Pot Rice Using glutinous rice. This is sticky rice cooked in a hot pot with preserved pork and Chinese Sausage. The juices and ingredients are infused into the rice inside the clay pot. Delicious and flavourful. This is the famous clay pot rice from Hoiping, China. Recipe is below:

Chicken Glutinous Rice Clay Pot

1/2 cup glutinous rice
1/2 cup water
4 oz. sliced chicken
1/4 teaspoon salt
1/4 teaspoon chicken base
1/4 teaspoon sugar
dash of sesame oil
1/4 teaspoon cornstarch
3 to 4 pieces preserved pork
1/2 Chinese sausage

For this recipe, you can use up to 1 cup rice if your clay pot is big enough. Put an equal amount of water if you add more rice.

Rinse rice in cold water 3 to 4 times until water is clear. Put water in clay pot and add water. Cover and bring to a boil at low to medium heat. Do not heat clay pot higher than medium heat. When water is boiling, add rice. Cook for 10 or more minutes. Glutinous rice takes longer to cook than regular rice.

Slice 4 oz. chicken and put into bowl. Add salt, chicken base, sugar, sesame oil and cornstarch. Mix well. Cut preserved pork into slices. Cut Chinese sausage into slices.

When rice is ready, add preserved pork and Chinese sausage. Cover and cook for 5 to 6 minutes. Spread sliced chicken in the middle and cover. Poke holes in rice to help steam come up. Cook for 8 to 10 or more minutes. Check to see if chicken is cooked all the way through. Top up with dark sweet soy sauce. Add green onions to garnish. Cover with lid and turn off heat. Serve in the clay pot itself. Enjoy!
