Crispy Asian Roast Duck With Homemade Plum Sauce

1 whole 4 lb. young duck
2 pieces ginger
2 stalks green onion
3 star anise
1 to 4 teaspoon Chinese 5 spice powder
1 1/2 tablespoon salt
1 teaspoon thyme
1 teaspoon Italian seasoning
3 tablespoons cooking oil (peanut oil)

Wash duck in cold water. Dry the duck inside and out. Pour some boiling water over the duck. Hang the duck to dry for minimum of 1/2 hour. Put duck on a plate and put into the fridge for 12 to 24 hours.

Let duck warm at room temperature for at least 1 hour. P the ginger, green onion stalks and star anise into the cavity of the chicken. In a bowl, put the Chinese 5 spice, salt, thyme and Italian seasoning and cooking oil. Mix well and then put these ingredients all over the surface of the chicken.

Preheat oven at 325 degrees F (162 degrees C). Put chicken into oven and cook for 1 hour to 1 hour and 15 minutes. Let chicken cool for at least 15 minutes before cutting.

Ingredient for plum sauce:

1 teaspoon cooking oil
1 teaspoon chopped ginger and garlic
1/4 cup water
3 tablespoons Apricot jam
3 tablespoons vinegar
1/2 teaspoon light soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/2 teaspoon Worcestershire sauce
2 tablespoon duck juce

Preheat a small pan at medium heat. Add cooking oil. Add chopped ginger and garlic. Briefly stir fry. Add water. Add Apricot jam, vinegar, light soy sauce, oil, salt, cinnamon and Worcesterhire. Add 2 or more tablespoons of the duck juice from the cavity of the duck.
Simmer sauce at low heat to reduce the liquid. Serve on the side or pour over cut up duck. The sauce is delicious. You can double or triple the recipe if you are serving a whole duck. Enjoy!

You can make the plum sauce with fresh apricots. Use 2 or 3 apricots for this recipe. Add 3 tablespoon sugar to the sauce if you are using fresh apricots.
