The recipe is below:

1 1/2 lbs. pork belly
1 teaspoon salt
1 teaspoon white pepper
1 teaspoon sugar
1 teaspoon 5 spice powder
1 1/2 teaspoon Chinese sparerib sauce or Hoisin sauce

Wash pork belly in cold water and dry. Put pork belly skin side down in a pan. Score the meat with a knife. In a bowl, add salt, white pepper, sugar and 5 spice powder. Mix well with a spoon. Spoon mixture onto meat and work into surface. Work mixture into crevices where meat had been scored. Be sure to put mixture on all side of the pork belly, except the skin's surface.

Turn pork belly over with skin side facing up. Use prongs or kitchen utensil to poke holes into the skin surface. Use paper towel to dry the skin surface. Put tray with pork belly into fried to cool for at least 3 hours.

To cook, preheat oven to 400 degrees. Put pork belly into oven. Cooking time for pork belly is about 20 minutes per pound. For example, this 1 1/2 lb. pork belly roast will take about 30 to 35 minutes to cook. After 20 minutes, check on the pork belly. Use prongs to make more holes on the skin. Poking holes this way will make the skin more crispy and crackly. Turn oven setting to "broil". Broil for 10 to 15 minutes. Keep an eye on the surface of the pork
