Here is delicious mouth watering fried rice cooking loaded with lot of ingredients. The Hokkien ( Fujian ) way of cooking fried rice. Enjoy.

List of Ingredients: * created by HAPPY WOK *
1 pc ---- chicken thigh (diced)
** marinade **
1 Tbsp --- each, light soy sauce, corn starch
1 tsp ------ each, rice wine, garlic (minced)
10 pc --- shrimp (shelled & de veined) +2 tsp corn starch
4 oz ----- baby scallop + 1 tsp corn starch
as needed --- cooking oil
2pc -------- eggs (slightly beaten)
5 to 6 cups -- cooked steamed rice (day old)
3 Tbsp -------- garlic (minced) for rice
** seasoning for rice **
1 Tbsp -- salt
1 tsp ----- white pepper
6 pcs ----- dried shiitake mushrooms ( hot water softened & diced)
4 stalks -- asparagus (sliced 1-inch diagonally)
1/2 pc ---- tomato (core removed & diced)
** pre mix sauce **
1 cup ----- chicken broth
2 Tbsp --- corn starch
1 Tbsp --- oyster sauce
1 tsp ------ light soy sauce
1 Tbsp --- sesame oil
1 tsp ------ white sugar
Note: If you like more sauce ( gravy on your fried rice ) then increase pre mix sauce by 50% more.
