Chinese Egg Foo Yung is a delicious and easy dish to make. Add your favorite ingredients such as chives and chicken. Top off the egg foo yung with "Chinese" style gravy. Recipe is below:

Chinese Egg Foo Yung With Chives And Chicken

1/2 cup chopped chives
1/2 cup cooked chicken
3 eggs
1/4 teaspoon sesame opil
1/2 teaspoon soy sauce
1/2 teaspoon chopped garlic and ginger (optional)
2 tablespoons cooking oil

Wash chives in cold water. Chop chives into small pieces. Chop 1/2 cup of cooked chicken. You can use other kinds of meat such as beef or pork. Beat eggs well and add sesame oil and soy sauce.

Preheat pan or wok at medium heat. Add cooking oil. Then add garlci and ginger and chicken. Stir fry briefly. Add eggs into the pan. Let cook about 1 minute, then spread the chives into the omlette. When the edges get bubbly, flip over the foo yung omlette. When the center of the egg foo yung stops being runny, the foo yung omlette is ready to be served. The foo yung is served whole on a plate of hot steamed rice. Pour gravy over rice. Enjoy!

To make the gravy:

In a pan or wok bring put 1 cup of water. Bring water to a boil.
Add chicken soup base and light soy sauce. Mix in cornstarch solution to thicken sauce. Add a few drops dark soy sauce if you want a darker gravy.
