When you buy a new carbon steel wok, you need to season and condition the wok. Seasoning a new wok means you start making a hard, black patina finish. This surface is non sticky and will help sear the food. First clean the wok with steel wool and dishwashing soap. Rinse and dry the wok. Follow all the steps so you will get a hard, black cooking surface for your wok. A well seared wok helps sear and lock in the flavours of the food. Usually it takes about a year to season the surface of the wok, but follow my procedure so you can season the wok in about 3 months.
