How to make ( the right way ) Old Traditional Cantonese / Hong Kong way of making delicious skinless pompano steamed fish. Loaded with saute fragrant ginger strips & hot oil soak green onion strips with light soy sauce & sesame oil perfectly. ( very few ingredients needed )

1 ------------- fish (fresh, cleaned 1½ pounds pompano)
3 stalks -- green onion ( julienne 4-inch thin strips)
3 Tbsp --- light soy sauce
2 Tbsp --- sesame oil
⅛ tsp ----- white pepper
2 Tbsp --- peanut cooking oil (for ginger frying)
2 oz ------- ginger (2 thumb size, julienne thin strips)
½ cup ---- peanut cooking oil (for sizzle at the end)
note: Use peanut cooking oil. It has a higher heat smoke point than regular cooking oil.
