Steamed Pork Spareribs With Squash

1 lb. pork spareribs
1/2 Kabocha squash

1 tablespoon chopped garlic
1 tablespoon fermented black beans
1/2 teaspoon sesame oil
1 teaspoon salt
2 tablespoons light soy sauce
1 tablespoon oyster flavored sauce
2 tablespoons brown sugar or regular sugar

Wash pork spareribs in cold water. Cut spareribs into small pieces. Cut out the outer skin of the squash using potato peeler or with a knife. It's okay to leave some of the skin on the squash. Cut kabocha squash in half. Cut out or scrape out the middle of the squash. Cut squash into chunks about 1 inch to 1 1/2 inches cubed.

Put spareribs and squash into a large serving dish. Add sesame oil, salt, soy sauce, oyster flavored sauce and cornstarch into the bowl. Mix all the ingredients with a fork or chopsticks. Add chopped ginger, chopped garlic and fermented black beans to the bowl. For dim sum size servings, put squash in first and then the spareribs into small bowls. You should be able to fill 2 to 4 bowls, depending on the size of the bowls.

Boil some water in a pan. Put the large dish or the small dishes in the pan. Cover and steam for 35 to 40 minutes. Serve with steamed ric if you like. The steamed juices and sauce goes perfectly with the steamed rice. Enjoy!
