as needed, cooking oil for frying tofu & stir fry
2 Tbs. ginger, minced
2 Tbs. garlic, minced
8 oz. ground pork
1 Tbs. dried shrimp, soaked in water to soften
5 dried Japanese shiitake mushrooms, soaked in water to soften then sliced
1 cup chicken broth
1 tsp. sugar
1 Tbs. dark soy sauce
2 Tbs light soy sauce
2 Tbs. rice wine
1 tsp. corn starch for the slurry
2 Tbs. water for the slurry
¼ tsp. white pepper
2 Tbs. sesame oil

2 stalks green onions, chopped 2-inch
1 Tbs. red chili pepper, diced
