4 oz ----- pork meat (sliced into thin strips)
1 Tbsp -- fish sauce (for meat marinade)
1 Tbsp -- each, ginger & garlic (minced)
as needed --- cooking oil
2 Tbsp -- Shaoxing rice wine (for sizzling)
2 pc —-- eggs
2 oz ----- each, celery, carrot & fresh wood ear mushrooms
6 oz ----- mung bean thread noodle
1 stalk --- green onions (cut 2 inches in length)
** pre mix sauce ****
1/2 cup -- chicken broth
1 Tbsp -- Chinkiang vinegar
2 Tbsp -- fish sauce 1 Tbsp -- each, oyster sauce & sesame oil
