Step by step instruction on how to sharpen a knife. I use a combination stone called an oil stone. This type of stone can be used dry to get really sharp knives. You can use or or petroleum jelly if the stone cuts too fast. This is a 2 step process for sharpening knives. The stone has two sides. The first side is for fast cutting for the initial course sharpening. Then the stone is turned over for the polishing side. The polishing stone removes the rough edges and the burrs. This stone is also called a carborundum stone. It is made of silicon carbide. This type of has good overall performance for cutting knives and not too expensive compared to other sharpening stones. It is a great stone for sharpening knives for cooking. I like sharpening my cleaver knife with this stone.
