10 cups water
½ cup rice wine
3 slices ginger
3 stalks green onion
Second boiling for 2 hours (for the soup)
½ cup wine

1 Tbs. white sugar

3 bay leaves
3 star anise
1 cinnamon bark

½ tsp. whole cloves
For veggies:
1 pound daikon
For garnish:
chopped cilantro & green onions
Dipping sauce:
Sichuan red chill oil with sediments
