Fresh corn is in the season. These two easy Chinese corn recipes are refreshing and delicious. The ingredients are just a few. Steamed eggs with corn reminds me of my childhood. We had it over rice, so comforting and homey. Stir frying corn is so quick to make in a few minutes, great side dish. If you don't have fresh corn, you may try canned corn. Enjoy!

Written recipe for Steamed Eggs with Corn and Stir Fried Corn:

Ingredients:
3 ears of fresh corn
2 eggs
1/2 bell pepper, diced
sesame oil
light soy sauce
chopped green onion
salt
oil
3/4 cup cold water

To prepare:
Remove the kernels from the corn cobs.

Steamed eggs with corn:
1. Beat two eggs in a bowl, and add a bit salt.
2. Mix the eggs with water.
3. Add 2 to 3 tbsp corn kernels, and mix.
4. Skim bubble from the mixture.
5. Boil a pot of water. Place the egg mixture bowl in the steamer, and steam about 8 to 10 minutes.
6. Turn off the heat, and let it cool off for about 2 to 3 minutes.
7. Dress the eggs with sesame oil, light soy sauce and green onion. Serve!

Stir Fried Corn:
1. Heat up a pan to high heat, and add some oil.
2. Stir fry bell pepper about 30 seconds.
3. Add corn kernels and some salt. Stir fry about 3 minutes.
4. Add a bit light soy sauce and mix. Serve!
