This spring, I cleared a small patch of land behind the house and set up a trellis to plant a chayote — locally we call it “yang si gua.” It’s an incredibly productive vegetable, with a fruiting season that lasts nearly four months. One family can’t possibly finish it all, so neighbors often come by to pick some, and the overripe or bug-bitten ones are simply fed to the pigs.
The flesh can be tender and crisp, or soft and sweet when cooked. With just one chayote, you can make a whole table of dishes — steamed, stir-fried, stewed, or mixed cold — and every way tastes delicious.
